I'm Looking for some simple camping recipes that will work and My 1 year old will eat! Thank u

Hot dogs, as someone else said, are the classic campfire food.
Something that I have taken to, and that my family enjoys, is to cook a roast before leaving. I then cut it into large bite size squares and vacuum seal it using a Seal-a-meal. At the campsite, people heat the individual pieces of meet over the fire on their hot dog sticks. No cooking or clean up for me at the camp, and people have fun eating.
Another classic of open fire cooking is hobo stew. I use ground beef, and again, I pre-cook it. At the campsite each person can take slices of potato, carrot, onion, hamburger, and seasonings and wrap them in aluminum foil. The foil packets are then placed among the coals of the fire to cook. The result is a meal fit for a king.
Oh, and don't forget the marshmallows!

Make some pasta and then put peanut butter on it, over the fire, to make a peanut-butter sauce for it. Its realllly good!

Let's see, grill recipes for a one year old……you don't ask for much, do you?
Kids love carrots and carrots are easy to cook. Wrap some baby carrots(small ones) and a few pats of butter in foil. Put it on the grill over a medium set of coals. Let it cook for about an hour.
Also, my kids love asparagus wrapped in prescutta(sp?) or bacon and cooked on the grill. I can't really give you a recipe for it. Just wrap 3 fresh asparagus spears with a slice of prescutta/bacon and cook on a grill until asparagus gets tender.
Beans are always a hit. Baked beans can be bought by the can and put in an inexpensive aluminum pan, seasoned to your taste, maybe with a little bbq sauce mixed in with them and topped with bacon. Cover with foil and cook on the grill with a low fire. After they simmer a while, remove the foil and let it cook down until the bacon begins to crisp.
Kabobs; These can be done with chunked ham or maybe shrimp, if you can get decent shrimp where you live. Alternate the meat or shrimp with pinapple chunks or cherry tomatoes or even cherries. I don't know about your kid, but mine love shrimp. Shrimp are easily over cooked, so when you think they need just a little longer, go ahead and pull them off.
Fish are easy for a kid to eat, as long as they have no bones. Break out the foil again, add some butter and seasonings, lay fish fillets over it all and fold the foil up and seal it. Let it cook over a low/medium fire. Once done, open and let cook until you're happy with moisture content.
By fire, I mean coals. 15 coals ashed over will give you a low fire. 30 will give you a pretty darned hot fire. You might have to add a few unlit coals to the fire as it burns down. Jut put them on top of burning coals and they will catch up.
Any fresh veggie can be done on a grill. Zuccini, squash, eggplant, whatever is in season. Just give it a little olive oil and a touch of salt, or an Italian dressing bath to keep it from burning up and put directly on the grill.
I hope this helps at least a little bit. I have 2 kids myself and I would fix any of this for them.
Like mentioned above, there's always the honorable hot dog. Smoked sausage are great on the grill too.
Whatever you cook at home, you can come up with some variation for the grill. You just have to be a little creative sometimes. Have fun with it.

Grilled cheese sandwiches in a "pie iron". Can even make an apple or cherry pie with one of these babies!
