Can mapp gas be used for cooking, such as on a Coleman camping stove?

Map gas burns hotter it might damage your stove !

I would not try the mapp on your coleman stove. It isn't regulated for that and won't have the right air/fuel mix.

Better to find some good projects around the house to use it up on.
