Check out http://www.ecopolitan.com. Lots of great, healthy ideas there, like dehydrated chips–lightweight, nutritious, and you can add nuts and berries you find along the way!

    just do an internet search.
one thing we found on the internet was to just take a piece of foil for each person. in that foil put a cut up potato, a chunk of hamburger, some veggie, and some chopped up onion. wrap it well with a couple layers of the foil and throw it in the fire or on a grill over the fire for a half hour or so. serve. we decided that this worked out so well that now we do it in the oven at home too.
found some other good ideas too, but this is the easiest one to type in for you. :)

Girl, I am actually in the process of writing a camping cook-book! Just last month I was the cook for a missionary team (21 people) in Mexico. Everything was done over a campstove or BBQ. Email me back for any of these methods or recipes:

    Fritata
    Baked french toast
    Chilaquiles (Easy mexican breakfast dish)
    Cinnamon Rolls
    Breakfast Wraps

Easy Chicken and Dumplings (The #1 request from friends, etc)
    Homemade pizza (really!)
(Easy) Grilled whole turkey and roasted potatoes
Fajitas or fish tacos (my favorite and really easy)
    Korean short ribs and rice

Break some eggs into a jar and put it in a cooler. Get some slab bacon and wrap in tin foil. Also, put in cooler. Take some milk and fresh sliced french bread. Also put in cooler.

There's nothing like hot french toast with crisp slab bacon in the woods for breakfast! Don't forget the syrup and the confectioner's sugar.

For dinner put a large salmon steak, cut up potatoes and carrots and peas in tin foil with
butter. Put in the side of the campfire turning occasionally. after about 45 minutes, open the tin foil. If the potatoes and carrots are done (thinly sliced) enjoy your meal.
