We are planning to cook our catch on or near the lake

best thing is to keep it siimple to get the best out of the fresh taste. wrap it in tin foil and put it on a hot rock at the side of the fire for 30 mins. or fry it in a bit of butter and lemon. or grill it, stuff it with fresh herbs – parsley, lemongrass, garlic

need camping advise and recipes?

Posted in Camping Recipes  by admin on December 20th, 2008

need help preparing for camping two days two kids never been as an adult gonna be in a tent need any suggestions at all recipes how to keep things cold etc

Coolers to keep things cold in….we usually freeze water in 1/2 gal.milk jugs to make ice for the coolers. Plus you then have water from your own tap at home to drink as the ice thaws. Also we usually freeze most meats we take with. They act as ice blocks also and will thaw for using. If you plan to grill hamburgers or hotdogs, freeze them seperately into patties and servings. They'll thaw easier for use.
Our kids loved making "hobo packs" (2x Foil wrapped sliced potatoes, hamburger, sliced carrots/celery/onion, with a bit of seasonings and a touch of oil. Cooked over the grill or campfire but need to be watched and turned several times to avoid burning. Ther are lots of websites for recipes for camping also to check out……have fun! Oh also..plan ahead in case of rainy weather and have things to do..cards, checkers, domino's etc.

favorite camping recipes, anyone?

Posted in Camping Recipes  by admin on December 18th, 2008

My family loves to camp, but are tired of the same old hamburgers and hot dogs grilled over a campfire. Any suggestions? I would like recipes for main dish and also breakfasts, please. Thanks!

Pocket Stew…. Take diced potatos, carrots, onions, canned mushrooms, skinless boneless chicken or beef, spoon of butter, salt, pepper, garlic, seasoning salt. Wrap all in tinfoil and throw on the fire grate or in the coals. Make sure to wrap tightly! This is fun because everyone can make thiers the way they like it and leave out what they dont like!

Also subs…make your favorite kind of sub sandwich wrap in tinfoil and heat over fire. Also can be used to make breakfast sandwiches…put ham and cheese on english muffins wrap in tinfoil and bake over the fire.

Another great thing is if you can find some Hobo Pie-irons you can make all sorts of cool sandwiches with them and fill with stuff like ham and cheese, eggs. or jam and peanut butter..
Check them out here I recommend them for all campers! http://www.cabelas.com/cabelas/en/templates/product/standard-item.jsp;jsessionid=VRIJXNL5DK4NZTQSNOFSCO4OCJVY2IWE?id=0031806515113a&navCount=0&cmCat=srchdx&cm_ven=srchdx&cm_ite=srchdx&CM_REF=http%3A%2F%2Fca.search.yahoo.com%2Fsearch%3Fsearch%3Dhobo%2Bpie%2Birons%26ei%3DUTF-8%26fr%3Dks-ans%26search_type%3Dhttp%253A%252F%252Frds.yahoo.com%252F_ylt%253DArJ12OkodvPMoTC2RuHZFiOzFQx.%252FSIG%253D114db5bg2%252F*-http%253A%252F%252Fca.search.yahoo.com%252Fsearch%26p%3Dhobo%2Bpie%2Birons&_requestid=54112

Another favorite of mine is corn on the cob…leave the husks on and soak overnight in salted water, throw the corn on the coals of the fire until they are cooked!! This is the best corn ever! and it goes good with baked potatoes and hamburger sticks.
Baked potato… take a potato with the skin on and slice it halfway through about 4-5 times fill the cuts with sliced onions and butter, sprinkle with salt and pepper wrap in tinfoil and throw on the coals they are done when you can squeeze them with tongs.
Hamburger sticks… take a pound of ground beef add 2 eggs, garlic, finely diced onions, squirt of mustard and some pepper mix together well. Take a peeled green stick and mold the mixture around the end and roast over the fire.

Make grilled cheese or french toast for breakfast…. Take a forked green stick and spread tinfoil between the 2 tips making it double thick…..hold it over the fire to toast your grilled cheese.

French toast.. beat 2-3 eggs with some milk and vanilla extract, dip bread in mixture making sure it is coated and fry on you tinfoil stick making sure to spray with pam first.

For dessert, Banana Boats…take a banana with the peel still on and slice it on the top curved edge at an angle from both sides ( follow the ridges on the top of banana) peel the slice out leaving the top edge attached and fill the inside of banana with chocolate chips and mini marshmallows, replace the strip of banana and skin wrap in tinfoil and throw on the coals. It is done when you can squeeze it with tongs.

Mock Angel food cake.. Take a loaf of unsliced white bread and cut into 2 inch cubes, coat in sweetened condensed milk, roll in shredded coconut, put on a stick and toast over te fire until golden brown. I love this stuff!

Does any one have any simple open fire camping recipes?

Posted in Camping Recipes  by admin on December 17th, 2008

I'm Looking for some simple camping recipes that will work and My 1 year old will eat! Thank u
maybe some grill recipes for kids?

Hot dogs, as someone else said, are the classic campfire food.

Something that I have taken to, and that my family enjoys, is to cook a roast before leaving. I then cut it into large bite size squares and vacuum seal it using a Seal-a-meal. At the campsite, people heat the individual pieces of meet over the fire on their hot dog sticks. No cooking or clean up for me at the camp, and people have fun eating.

Another classic of open fire cooking is hobo stew. I use ground beef, and again, I pre-cook it. At the campsite each person can take slices of potato, carrot, onion, hamburger, and seasonings and wrap them in aluminum foil. The foil packets are then placed among the coals of the fire to cook. The result is a meal fit for a king.

Oh, and don't forget the marshmallows!

Please share some of your favorite camping recipes?

Posted in Camping Recipes  by admin on December 9th, 2008

I have the basics: omelettes in a ziploc bag, classic s'mores, hot dogs and hamburgers. I'd really like to change up my typical camping menu.
Kei: Skippy10 answered the ziploc baggie omelette question – they come out PERFECT! I don't do camping eggs any other way!!! lol! There are some great suggestions here, looking forward to trying some of them! Especially the BEER one! hahaha!

Italian sausages boiled all day in beer and peppers and onions, grill, then put back in the pot and bring to a boil again. Very good.

Also, just wondering if you can put the recipe for omelettes in a ziploc bag? Thank you.

Have fun camping.

Does anyone know any vegetarian camping recipes??

Posted in Camping Recipes  by admin on December 7th, 2008

I am going camping soon and have a one burner stove. I can't make a campfire because it is a child- friendly campsite. I will be cooking for myself. Please can you give me recipes for breakfast and for supper. I everything apart from meat, fish, eggs and seafood.

All ideas appreciated.
gareth you obviously have a LOT of growing up to do, how old are you?? 2?
NO egg glitter
I meant:
NO egg, Glittergirl.

Pasta with tomatoes and herbs. Can be done in one pot. Cook the pasta, drain, add the toms and herbs.

Take some tins of 3 bean salad, which you can eat hot or cold, with cheese sprinkled on.

You can also soak and cook up lentils, mixed with onion and cheese or herbs.

Breakfasts, I would stick to cereals, or baked beans and fried toast. Veggie rashers – you could also try the veggie Glamorgan sausages with beans. Cook all the above in one frying pan.

Remember to take your nuts and seeds for your oils and energy, as they carry well.

In need of some good camping recipes.?

Posted in Camping Recipes  by admin on December 5th, 2008

Going on a camping trip. Will be staying in a cabin but there is no stove so we will be using the open fire to cook. Any good recipes? We do have a small propane stove if we really need it.

for breakfast fry up some new potatoes with sausage and scrambled eggs for a scrambled mess. you can use some of the new potatos for dinner the previous night.

And you can also cut up potatoes in 1" cubes, add about 2 tablespoons butter, 3 strips cooked bacon, crumbled, 2 green onions, chopped, and salt and pepper to tasted. You put everything but the cheese into the foil and cook until potatoes are tender. Add cheese last few minutes of cooking.

I always think chili goes well at camp sites too, no matter how hot it gets.. its a good flavorful, spicy meal to finish off the day.

For dessert ;
campfire upside down cake

INGREDIENTS:
12 cake donuts
1 1/4 cups brown sugar
1 1/4 sticks butter, softened
12 pineapple rings

PREPARATION:
Slather butter on donuts. Pack on brown sugar. Top with pineapple. Seal tightly in foil packet, and cook on coals for 5 minutes.
