I was always in charge of the food and cooking so over the years I have learned a few things.
I'd take bagels instead of bread (they keep better)
Take potatoes, onions, garlic, green peppers etc.
these can be used for breakfast, lunch, dinner.
Take squeezable margarine, soy milk in boxes (keeps better)
Mix salt/pepper together & put in small container.
Liquid eggs are easier to keep too.
Get a small bag of REAL bacon bits, add to eggs.
Get a bottle of complete pancake mix you just add water to.
I got coffee in those foil packages, looks like a tea bag.
Brought powdered creamer and sugar packets.
Brought 2 or 3 SOS scour pads to clean the cookware, plates etc. Keep them in a zip baggy.
Took Jiffy pizza crust mix, pepperoni, and tomato paste and made pizzas on the fire using a flat rock to cook it on.
Brought tuna in packets, mayo & relish packets and had tuna salads.
Brought Pringles chips, packed in can & easy to transport.
Bring lots of Rice Crispy treats, they are foil packaged.
You really can find all you need in a regular grocery store, just think ease of use and transportability. Finally, I kept all the food in a large storage container. And if you can put the container in a vehicle at night. If you don't there will be all kinds of critters coming around trying to get at the food. Have fun!!
References :
Corned Beef Stew

INGREDIENTS:

    * 1 or 2 cans corned beef
    * 4 large potatoes, diced
    * 6 carrots, diced
    * 1 large onion, diced
    * salt and pepper, to taste
    * Louisiana Hot Sauce, to taste

PREPARATION:
Put potatoes and carrots in a Dutch oven or other large pot with one quart of water. Boil until potatoes and carrots are almost tender enough to eat. Add onions and cook another ten minutes. Add corned beef last and cook for ten more minutes.
Salt and pepper to taste (I like to add Louisiana Hot Sauce to mine, not Tobasco). Serve hot with crackers.
References :
All the answers are very good, however, no one mentioned a whistle on a cord around your neck. Many people go for a short walk or to a view point, and get lost. Very important to be able to make a loud noise, so you can be located. Best wishes
References :
if you're just going to be doing it in the summer with nights getting as low as 60, I'd just go to target or wal-mart and get whatever they have there.. don't invest a TON of money in great gear... you only need to get into north face, columbia, kelty, etc., when you're buying specific functional gear like winter camping or light-weight backpacking gear....

you should always use "Seam Grip Seam Sealer" on the seams of any tent.. if you buy one that says it's waterproof, don't believe it unless you pay over $300 for the tent which has an extra lining on the seams to make it waterproof (which is what you're paying for vs the $50 wal-mart tent)... if you try any other sealer, it just won't work, i know, i've tried...

the one thing you should know is that you should always add 20 degrees to the sleeping bag's rating..
example:
if a k-mart sleeping bag is rated at 40 degrees, think of it as a 60 degree sleeping bag.. if you happen to be camping and it might dip into the 50s, you should bring an extra blanket or sheet to line the sleeping bag with.. using a liner will add several degrees and make your sleeping experience more enjoyable...

another thing to know:
get cheap gear, but invest in your sleep with a therm-a-rest... this is an inflatable mattress you sleep on.. it's not like an inflatable bed, the therm-a-rest is only 1-2 inches thick... using a mat under your sleeping bag is the difference between just a night's sleep or a good night's sleep...
References :
experienced hiker/backpacker/camper

Another vote here for keeping it simple-foil, with garlic and a little olive oil, crushed sea salt and ground black pepper and you will end up with a great tasting fish fillet, personally i think that something cooked on a campfire always tastes the best as opposed to pan seared etc, just wrap it tightly in foil and leave in the embers of the fire to cook.
